It's a Jack Carvelle. Not very good table fair from what I have heard. Ask Ole bill though he might have a reciepe.

Here's the only recipe I've ever heard for Jack Crevalle:

Season the fillet to your liking
Place the fillet on an oak plank
Place the board and fish on a hot grill until the fish is done
Throw away the fish and eat the board

I agree. While bull red fishing, my dad hooked one. We had to pull anchor and chase this thing, between a bunch of other boats. Every time it got close to the boat, it take off on a reel-screaming run. I think it took over an hour to land. I think it was a half hour before we saw it and thought we had it almost whooped. I think if we had known sooner what it was, we would have just cut the line. Made for a lot of fun, though.

aint got no recipes fer jack crevalle them things can hurt ya if ya eat em got some kind of poison in em that seems to effect them not sure what its called but its common in the crevalle family well i looked it up and here is what they say Crevalle jacks can be poisonous to eat due to the threat of ciguatera (http://en.wikipedia.org/wiki/Ciguatera) poisoning, but they are prized as a game fish.
