Its been a while! So I decided me and Charlie needed to go get some flatties. We hooked up with Scott Mckey ([ www.texasfloundergigging.com/ - ) got on the water about 11:00. Hit a few places. Got 14 of them. We called it quits at 2:30am. And a long night as it was about a quater till 5:00 when I got to bed. Had fun and I am ready to do it again soon. O I almost for got it only cost me two big bags of ice.That it!!!!

Wow, those are some great looking door mats!!! You know?? I have a gigging pole too. :icon_wink:

ncfl you have a flat bottom boat to go skinny water just pole along,, turn on the lights ,stay dry

John no ghost. Just the wifes smoke from ciggrettes.
Gator no cookies just some of those darn good biscuts.
roadtrip57 I got all the ice covered.
ole bill lets see what kind of recipe you can come up with.
CT let me see.
I work on his rig. And as payment he takes me out and we call it even.
NCFL you pole is too short. We use 9ft gig poles.

STUFFED FLOUNDER LA FOURCHE
INGREDIENTS
4 Flounders (1-1/2 Pound Each)
2 garlic cloves (minced)
1/2 lb lump crab meat
1/2 cup celery (finely diced)
1/2 lb shrimp (small)
3 TBL. parsley (chopped)
1 egg (beaten)
1/2 cup green onions (sliced)
1 lemon (juice)
salt,
black pepper, cayenne
1 cup bread crumbs
1 lb. butter (unsalted)
1 -1/2 cup white wine (dry)
1/2 tsp. paprikaI

NSTRUCTIONS
In heavy pan saute onions, celery, garlic in the butter over medium heat. When vegetables are soft add shrimp, crab, egg, parsley and egg mixture to the vegetables. Slice each flounder on the dark side down the middle. Slice toward the sides making a pocket under the meat large enough to place the seafood stuffing. Season the stuffing to taste, and fill the pocket leaving a mound on top. Place in pan with 1 1/2 cups of dry white wine. This will keep flounder moist , and keep from sticking. It also helps to rub butter on bottom of the pan. Sprinkle Paprika on top and bake for 25 minutes at 375 in oven.

When I was a teenager in Daytona, I nearly gigged a 4' sting ray .... gives me shivers still to this day ....

Luckily I was on my friends Boston Whaler at the time and not snorkelling with them!
